Description

Succulent chicken breasts are glazed in a sweet and tangy balsamic fig sauce for a quick and easy weeknight meal that’s bursting with flavor.


Ingredients

– 4 boneless, skinless chicken breasts

– 1/2 cup balsamic vinegar

– 1/2 cup fig preserves

– 2 cloves garlic, minced

– 1 teaspoon fresh thyme, chopped

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Pat the chicken breasts dry and season with salt and pepper.

2. In a large skillet over medium-high heat, cook the chicken for 4-5 minutes per side until browned.

3. In a small bowl, whisk together the balsamic vinegar, fig preserves, garlic, and thyme.

4. Pour the balsamic fig sauce over the chicken and bring to a simmer. Reduce heat to low and let the chicken cook for an additional 8-10 minutes, basting occasionally, until the sauce thickens and the chicken is cooked through.

5. Serve the Balsamic Fig Glazed Chicken immediately, spooning the sauce over the top.

Notes

This recipe is easily doubled to feed a crowd. For a lower-carb option, serve the chicken over a bed of steamed broccoli or cauliflower rice.
