Ingredients
– 12 medium-sized mushrooms, stems removed and chopped
– 1 ripe avocado, mashed
– 2 large eggs, hard-boiled and chopped
– 2 tablespoons finely chopped fresh parsley
– 1 tablespoon lemon juice
– 1/4 teaspoon garlic powder
– Salt and black pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a medium bowl, mix together the chopped mushroom stems, mashed avocado, chopped hard-boiled eggs, parsley, lemon juice, garlic powder, salt, and pepper until well combined.
3. Scoop the avocado-egg mixture into the hollowed-out mushroom caps, packing it in gently.
4. Arrange the stuffed mushrooms on a baking sheet lined with parchment paper.
5. Bake for 12-15 minutes, or until the mushrooms are tender and the filling is heated through.
6. Serve the Avocado & Egg Stuffed Mushrooms warm, garnished with additional parsley if desired.
Notes
