Description

This Autumn Chopped Salad is a celebration of the season’s best produce. Crisp greens, juicy apples, crunchy radishes, and tangy feta come together in a flavor-packed dish that’s perfect for a quick and healthy meal.

Ingredients

– 5 cups mixed greens (such as romaine, spinach, and kale)

– 1 apple, diced

– 3 radishes, thinly sliced

– 1/4 cup crumbled feta cheese

– 1/4 cup toasted pecans

– 2 tablespoons apple cider vinegar

– 1 tablespoon olive oil

– 1 teaspoon Dijon mustard

– 1 teaspoon honey

– Salt and pepper to taste

Instructions

1. 1. In a large salad bowl, combine the mixed greens, diced apple, sliced radishes, crumbled feta, and toasted pecans.

2. 2. In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, and honey. Season with salt and pepper to taste.

3. 3. Drizzle the vinaigrette over the salad and toss gently to coat.

4. 4. Serve the Autumn Chopped Salad immediately, garnished with additional toppings if desired.

Notes

For a heartier meal, you can add grilled chicken or roasted chickpeas. The salad can also be made in advance and stored in the refrigerator for up to 3 days.
