Ingredients
– 1 pre-made pie crust
– 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
– 1 cup shredded Gruyère cheese
– 3 large eggs
– 1 cup heavy cream
– 1/4 cup grated Parmesan cheese
– 1 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat oven to 375°F.
2. Roll out the pie crust and press it into a 9-inch tart pan with a removable bottom. Trim any excess dough from the edges.
3. Arrange the asparagus pieces in a single layer in the tart crust. Sprinkle the Gruyère cheese evenly over the top.
4. In a medium bowl, whisk together the eggs, heavy cream, Parmesan, salt, and pepper. Pour the custard mixture over the asparagus and cheese.
5. Bake for 30-35 minutes, or until the custard is set and the top is golden brown.
6. Allow the tart to cool for 10 minutes before slicing and serving.
Notes
For a crispier crust, you can blind-bake the tart shell for 10 minutes before adding the fillings. This tart can be served warm or at room temperature.
