Description

This Asian-Style Smashed Cucumber Salad is a refreshing and flavorful side dish that’s quick and easy to prepare. The crunchy cucumbers are tossed in a tangy, slightly sweet dressing for a bright and satisfying accompaniment to any meal.


Ingredients

– 1 pound Persian or English cucumbers, smashed and cut into 1-inch pieces

– 2 tablespoons rice vinegar

– 1 tablespoon sesame oil

– 1 tablespoon soy sauce

– 1 teaspoon white sugar

– 1 clove garlic, minced

– 1 teaspoon grated fresh ginger

– 2 tablespoons chopped fresh cilantro

– 1 tablespoon toasted sesame seeds

– Salt and pepper to taste


Instructions

1. Smash the cucumbers using a flat-bottomed bowl or mallet. Cut the smashed cucumbers into 1-inch pieces and place them in a large bowl.

2. In a small bowl, whisk together the rice vinegar, sesame oil, soy sauce, sugar, garlic, and ginger.

3. Pour the dressing over the cucumbers and toss to coat evenly.

4. Sprinkle the chopped cilantro and toasted sesame seeds over the salad and toss again.

5. Season with salt and pepper to taste.

6. Serve the Asian-Style Smashed Cucumber Salad chilled or at room temperature.

Notes

For a spicier version, add thinly sliced red chili peppers or a pinch of red pepper flakes. This salad is best enjoyed the same day it’s made, but leftovers will keep in the refrigerator for up to 2 days.
