Ingredients
– 1 pound boneless, skinless chicken breasts
– 1/2 cup fresh or dried cranberries
– 4 cups mixed greens
– 1 cup mandarin orange segments
– 1/4 cup sliced almonds
– 2 tablespoons rice vinegar
– 1 tablespoon soy sauce
– 1 tablespoon honey
– 1 teaspoon sesame oil
– 1/2 teaspoon grated ginger
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat your grill or grill pan to medium-high heat.
2. Season the chicken breasts with salt and pepper.
3. Grill the chicken for 6-8 minutes per side, or until cooked through. Allow to cool, then slice or shred the chicken.
4. In a large salad bowl, combine the mixed greens, cranberries, mandarin oranges, and sliced almonds.
