Description

Indulge in these Apricot and Goat Cheese Appetizers, a quick and easy crowd-pleasing dish that delivers a burst of sweet and tangy flavors. The combination of creamy goat cheese and juicy, ripe apricots nestled in flaky pastry shells is simply irresistible.


Ingredients

– 1 sheet puff pastry, thawed

– 4 oz (113g) soft goat cheese

– 1/4 cup (60ml) honey

– 1 tsp (5ml) lemon zest

– 8-10 fresh apricots, pitted and sliced


Instructions

1. Preheat the oven to 400°F (200°C).

2. Unfold the puff pastry sheet and cut into 12 equal squares.

3. Press the pastry squares into a greased 12-cup mini muffin tin, pressing the dough up the sides to form a cup.

4. In a small bowl, mix together the goat cheese, honey, and lemon zest until well combined.

5. Spoon a heaping tablespoon of the goat cheese mixture into each pastry cup.

6. Top each filled cup with a slice of fresh apricot.

7. Bake for 15-18 minutes, or until the pastry is golden brown.

8. Allow to cool for 5 minutes before carefully removing the appetizers from the muffin tin.

9. Serve warm or at room temperature.

Notes

These appetizers can be made ahead and refrigerated for up to 3 days. Simply reheat in the oven at 350°F (175°C) for 5-7 minutes before serving.
