Ingredients
– 3-4 lb pork shoulder, cut into 2-inch chunks
– 2 cups apple cider
– 1 onion, diced
– 4 garlic cloves, minced
– 2 tsp dried thyme
– 1 tsp smoked paprika
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. 1. Season the pork shoulder chunks with salt and pepper.
2. 2. Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the pork and sear on all sides until golden brown, about 3-4 minutes per side.
3. 3. Remove the pork from the pot and set aside. Add the onion and garlic to the pot and sauté until fragrant, about 2 minutes.
4. 4. Pour in the apple cider and scrape up any browned bits from the bottom of the pot.
5. 5. Return the pork to the pot and bring the liquid to a boil. Reduce the heat to low, cover, and simmer for 1.5-2 hours, or until the pork is very tender and falling apart.
6. 6. Remove the pork from the pot and shred or slice it. Taste the cooking liquid and adjust seasoning if needed.
7. 7. Serve the shredded pork with the braising liquid spooned over the top. Enjoy with your favorite sides.
