Description

Ingredients

– 1 1/2 cups all-purpose flour

– 1/2 teaspoon salt

– 1 cup (2 sticks) unsalted butter, chilled and cubed

– 1/4 cup ice water

– 4 medium Granny Smith apples, peeled, cored, and sliced

– 1 cup shredded cheddar cheese

– 2 tablespoons granulated sugar

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1 egg, beaten with 1 tablespoon water (for egg wash)


Instructions

1. In a food processor, pulse the flour and salt to combine. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.

2. Add the ice water and pulse just until the dough begins to come together. Turn the dough out onto a lightly floured surface and gently shape it into a disk. Wrap in plastic and refrigerate for at least 30 minutes.

3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

4. In a large bowl, toss the apple slices with the cheddar cheese, sugar, cinnamon, and nutmeg until well combined.

5. Roll the chilled dough out into a 12-inch circle on a lightly floured surface. Transfer the dough to the prepared baking sheet.

6. Arrange the apple-cheese mixture in the center of the dough, leaving a 2-inch border. Fold the dough over the filling, pleating it as you go.

7. Brush the dough with the egg wash.

8. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling. Allow to cool for 10 minutes before slicing and serving.

Notes

For a flakier crust, you can use a combination of all-purpose flour and whole wheat flour. To make it extra indulgent, serve the galette with a scoop of vanilla ice cream or a drizzle of caramel sauce.
